Ingredients
LentilsChicken or Beef - cooked or leftovers, choppedPotatoes, peeled and slicedCarrots (optional)Onions (optional)Tomato PasteChicken Broth/Bouillon (optional)WaterSalt (optional)Pepper
Directions
Soak lentils for several hours. Rinse.

Chop onion and carrot and saute together in a couple of teaspoons of oil/butter til onion is translucent.
Peel and thinly slice potatoes.

Add 4-6 cups++ of water or broth (for thin or thick soup), lentils, onion, carrots, potatoes, chopped meat and tomato paste to a soup pot and bring to a boil.

Turn down heat and simmer for 45 minutes to an hour.
Add a dash of salt and pepper and serve.

    delicious, easy and filling - good way to use up leftover chicken or beef - recipe could use a bit of tweaking as far as how much of each ingredient to use - I used 2 carrots, 1 med onion, 4 med potatoes and half a small (tiny) can of tomato paste. Use orange lentils - they cook faster than brown. - 3/5/20
