Baked Eggs in Canadian Bacon Cups with Bread for 3

Ingredients
Directions
3 slices whole wheat bread, flattened with a rolling pin or bottle3 slices of Canadian bacon3 eggsSalt and pepper to taste3 scallions, chopped3 tablespoons shredded cheeseFruit for garnish
1. Spray nonstick cooking oil in three of the muffin cups.
2. Line each of the sprayed cups with one slice of the bread.
3. Layer one piece of Canadian bacon on each slice of bread.
4. Crack one egg into each cup; and sprinkle each egg with salt and pepper.
5. Bake in a 350�F preheated oven for 10 minutes till the white looks set but the egg is set and yolk is still slightly runny.
6. Lift each egg out of the muffin tine and remove liner.
7. Top with chopped scallions, shredded cheese and serve.
8. Garnish with fruit, if desired.
