Spicy Chipotle Chili

Ingredients
1 lb. Ground Turkey Breast, Extra Lean1 14 oz Can Diced Tomatoes - No Salt Added2 8 oz. Cans Tomato Sauce - No Salt Added1 14 oz. Can Black Beans1 Can Hot Rotel Dice Tomatoes & Chiles1 Medium Onion, diced1 Tbsp Olive Oil3 Tbsp Chili Powder2 Tbsp Chipotle Powder1/2 tsp Cayenne Pepper1 tsp Cumin, GroundSalt to taste
Directions
In large sauce pan, heat olive oil and onions for a few minutes, add ground turkey and cook until meat is no longer pink.

Add the remaining ingredients and cook until boiling.

Turn heat on low and simmer for three hours.

Makes 6 servings.

    She is not kidding when she says its hot!! I used original rotel instead and alot less chipotle and it was fantastic! I put a little low fat cheese and low sodium crackers on top and it is very filling and very healthy. Will make many more times! - 4/14/08
