Ingredients
1.5 c diced russet potatoes1.5 c diced carrots3/4 c diced onion1/2 c raw cashews1Tbsp sesame seeds4 tsp salt2 Tbsp lemon juice4 c. water from boiling vegetables3 Tbsp earth balance margarine4 c. uncooked elbow macaroniwhite pepper to tastsdash of cayenne pepper to taste
Directions
Boil potatoes and carrots. Saute onion in margarine. Blend everything together and pour over cooked macaroni. As it cools, it will soak into the noodles and thicken.
