Keto Vanilla Pudding ( egg and starch free)

* 1 cup heavy cream* 1 cup whole milk* 1/4 cup cold water + 2 tbsp water* 2 tbsp plain gelatin* 2 tsp vanilla extract* drops of Stevia to taste
1. In a sauce pan, heat 2tbsp of water until bubbly. ( this prevents milk from sticking and burning)
2. Add milk and heavy cream to the hot pan and heat until very warm ( do not boil).
3. Sprinkle gelatin over 1/4 c water and let sit for 5 minutes.
4. Add softened gelatin to warmed milk and stir until dissolved. Turn off the stove.
5. Stir in vanilla extract and stevia.
6. Pour into serving bowls/cups and chill for about 30-45 minutes until set.
Serving Size: makes 4 servings ( 1/2 cup each)
