*almost* Fat Free Twice Baked Potatoes

Ingredients
3 medium potatoes, scrubbed clean1/4 cup reduced sodium chicken broth3/4 cup fat free cheddar cheese, shredded2 green onions, sliced3 Tbsp fat free sour cream1 tsp dijon mustard1/4 tsp paprika
Directions
1. Heat oven to 400 degrees.

2. Pierce potatoes in several places and bake 1 hour or until tender. Immediately cut potatoes lengthwise in half and scoop out centers, leaving a 1/4" thick shell.

3. Beat potatoes, broth, 1/2 cup cheese, onions, sour cream and mustard with mixer until well blended. Spoon back into shells and top with remaining cheese and paprika.

4. Bake 20 minutes or until cheese is melted and potatoes are heated through.
