Red Potato Salad

Ingredients
2 lb small red potatoes, scrubbed clean & halved3 Tbsp cider vinegar, divided1/2 cup fat free mayo1/2 cup fat free Greek yogurt2 scallions, chopped2 medium celery stalks, chopped2 Tbsp parsley, chopped 1 tsp dijon mustardSalt & pepper, to taste
Directions
1. Add the potatoes to a large pot of water. Bring to a boil, reduce the heat and partially cover with a lid. Simmer 10 - 15 minutes or until potatoes are tender; Drain.

2. Transfer potatoes to a large bowl and drizzle with 1 Tbsp cider vinegar.

3. In a small bowl, combine 2 Tbsp cider vinegar, mayo, yogurt, scallions, celery, parsley and mustard and mix until well blended.

4. Pour the yogurt mixture over the potatoes and toss to coat. Season to taste with salt and pepper.

5. Once mixture has cooled completely, cover and refrigerate at least 1 hour prior to serving.
