Corn Fritters

1 1/2 cup frozen corn, thawed2 scallions, diced small2 garlic cloves, minced2 egg whites, beaten1/3 cup flour3 Tbsp olive oilSalt & pepper, to taste
1. In a large bowl, combine the corn, scallions and garlic and stir to mix. Add the egg whites and flour and mix until smooth. Season to taste with salt & pepper.
2. Place a Tbsp of oil in a large skillet over medium heat. Using a 1/4 cup measuring cup scantly filled, add the corn mixture to the hot oil, each pan should hold 4 fritters at a time. Lightly press down on each until flat.
3. Cook 1 - 2 minutes per side, or until golden brown. Remove from pan and place on a plate lined with paper towels to absorb any excess oil. Repeat until all corn mixture is used.
