8.5 oz package microwavable quinoa andbrown rice blend*15 oz can chickpeas, drained and rinsed½ medium cucumber, chopped1 cup grape tomatoes, cut in half¼ cup chopped fresh parsley3 tablespoons olive oil1½ tablespoons lemon juice¼ teaspoon salt, ¼ teaspoon pepperMay also add: ½ cup crumbled feta cheese
Cook rice according to package directions. Chop cucumbers & parsley and slice tomatoes in half. Drain chickpeas. Combine rice, chickpeas, cucumber tomatoes, parsley, oil, lemon juice, salt and pepper in a large bowl. Divide into 4 to 6 serving containers and keep chilled.
