Egg & Salmon Sandwich

1/2 teaspoon olive oil1 tablespoon finely chopped red or white onion2 large egg whites, beatenPinch of salt1/2 teaspoon capers, rinsed and chopped or green olives1 ounce smoked salmon1 slice tomato1 whole-wheat English muffin, split and toasted
In a bowl, whisk together the egg with 1 tablespoon of cold tap water and a sprinkle of salt
Heat oil in a small nonstick skillet over medium heat.
Add onion and cook, stirring, until it begins to soften, about 1 minute.
Add egg whites, salt and capers or olives (if using) and cook, stirring constantly, until whites are set, about 30 seconds.
To make the sandwich, layer the egg whites, smoked salmon and tomato on English muffin.
Serving Size: 1 piece
