Bajra Roti

1 cup bajra (millet) flour, lightly packed1 cup water1/4 teaspoon water
Boil water and salt. When water comes to a boil, add the bajra and turn the temperature to low. Leave on heat for two minutes.
After two minutes, use a strong spoon to mix bajra and water. When cool enough to touch with your hands, knead until there is no dry flour, and then form into eight small balls.
Roll the balls into roti shape. You will probably need additional flour so that the balls don't stick to the rolling pin. You may need to roll the balls in plastic or parchment paper.
Cook on medium heat on a tava or griddle for 3 minutes. Add light oil to the top of the roti (optional) and then flip and cook on the other side for 3 minutes, or until cooked.
