Low Sodium Slow Cooker Beef Roast with Vegetables

3 lb. boneless beef chuck roast1 medium onion, sliced1 c. burgundy or other dry red wine2 Tbs chopped garlic8 medium potatoes, peeled and cut into 1-inch cubes1 lb. baby cut carrots1 can broth (beef or vegetable)
Place the onion slices on the bottom of the slow cooker. Place the roast on top of them. Pour the wine and broth over all. Spread top of roast with garlic. Top with the potatoes and carrots. Cover tightly. Set to medium low (2 on my slowcooker) and leave it until dinner time the next day.
I usually start this Saturday afternoon for dinner at after church the next day, but it is very forgiving and can be left much longer.
