Whole Wheat Spice Bread

1 cup hot, brewed coffee 1/2 cup raisins 1/2 cup unsweetened applesauce1/2 cup dark brown sugar 2 eggs 2 tablespoons molasses 1 teaspoon vanilla extract 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1/2 teaspoon ground cloves or allspice1/2 teaspoon ground ginger 1/2 teaspoon fresh grated ginger root (optional)2 cups whole wheat flour 1/2 cup old fashioned oats1 teaspoon baking soda 1/2 teaspoon salt (1/2 cup chopped walnuts - optional and not included in nutrition calculations)
Soak raisins in coffee until plump. Do not drain.
Cream together the applesauce, sugar and eggs.
Blend in molasses and vanilla.
In a large bowl mix together the cinnamon, nutmeg, cloves, ginger, flour, oats, baking soda, and salt. Make a well in the center of the bowl.
Add the liquid ingredients to the well in the dry ingredients. Stir in coffee with raisins (and nuts if you add them).
Pour batter into a greased 9x5 inch loaf pan.
Bake in a preheated 350 degree F(175 degrees C) oven for one hour.
One serving is 1/12 of a loaf.
* All margarine may be used in place of applesauce for a higher-fat, tastier loaf.
** Sugar may be doubled for regular sweetness or use half Splenda sweetener. This bread is not sweet. I have not made it with all Splenda.
*** Candied ginger may be used for added sweetness. Remove fresh ginger from the recipe if you use the candy.
**** You may use white flour.
