Skillet Chicken on Wilted Spinach

Ingredients
1 Tbsp olive oil1 lb boneless skinless chicken breast halves1/4 cup white wine3/4 cup chopped sweet onion2/3 cup low sodium chicken broth2/3 tsp thyme1/8 tsp black pepper1 lemon, juiced12 oz baby spinach leaves (2 ready pak bags)
Directions
Heat the oil in a skillet over medium heat; add chicken and cook til browned on both sides. Add wine, onion, broth, thyme, pepper and lemon juice. Reduce heat; cover and simmer for 10 minutes, or until chicken is cooked through. Evenly pportion spinach leaves on dinner plates, keeping it together as much as possible. Top each seving with a chicken breast half and let the heat of the chicken perfectly wilt the spinach.
