MUFFIN IN A MINUTE Sandwich Bread

Ingredients
2 tablespoons ground flax seed (meal)2 tablespoons almond meal1/2 teaspoon baking powder1/4 teaspoon onion powder1/8 teaspoon sea salt1 egg1 teaspoon olive oil3 drops liquid steviaa pinch of an herb if desired
Directions
Combine the dry ingredients together in a mug or cup or other small microwaveable container. In a small bowl, using a fork, whip the egg, oil, optional herb, and stevia together. Scrape out the egg mixture using a spatula and pour it into the mug with the dry ingredients. Mix well. Microwave on high for one minute. Dump out of the mug immediately and let cool.

The slice into 4 slices and use to make two sandwiches.

Serving Size: Makes one muffin or 2 small sandwiches.
