Blue Corn Muffins

Ingredients
1 c. lowfat buttermilk1 egg2 T. fat free plain yogurt2 c. blue corn flour (fairly fine grind)2 tsp. baking powder1/4 tsp. baking soda1/2 tsp. salt
Directions
Combine dry ingredients in a medium mixing bowl. Whisk till well mixed.


Combine wet ingredients in a measuring cup, whisking till well mixed. Add to dry ingredients.


Scoop into greased muffin tins (a scant 1/4 cup each).


Bake at 400 deg. F. for 12-15 minutes, till done.

    I think there was something overlooked in this recipe, like all-purpose flour. I have a similar recipe that has 1 cup all-purpose flour in addition to the blue corn meal. It makes all the difference. The addition of the flour would raise my rating to at least a 3, probably a 4. - 12/2/17
