1 pound lean ground beef1 chopped yellow onion1 chopped green bell pepper1 clove chopped raw garlic1 tsp cumin1 tsp cayenne pepper1 tbsp oregano1 tsp cinnamon1 can beef broth1 can kidney beans1 can black beans1 can pure pumpkin puree2 cans diced tomatoesolive oilsalt and pepperoptional toppings:sour creamchopped scallionsbacon bitsbaked acorn squash with maple syrup
Pour some olive oil into a hot skillet and brown your ground beef. Transfer beef to crock pot on HIGH. Saute the chopped onion, pepper, cumin, cayenne, oregano, cinnamon, and garlic in the leftover beef juices and transfer to crock pot once tender. Add beef broth, kidney beans, black beans, pumpkin puree, and diced tomatoes and cook on HIGH for about 2 hours or on LOW for 4 hours.
