Potato, Sausage and Spinach Soup

1 TB salted butter1 TB EVOO1 cup chopped onion340 g (about 2 large) peeled and chopped white potatoes1/2 LB (about 2 links) chopped mild Italian Sausage1 litre chicken stock (no salt added)4 cups fresh chopped spinach1/2 tsp dried basil4 dash sea salt2 dash pepper1 cup half and half cream
In a hot sauce pan over med high heat, melt butter and EVOO. Saute onion until soft and translucent. Add sausage and potato, continue sauteeing for about 10 min. Add broth and herbs & S&P and simmer for 20 min. Add spinach and simmer until spinachis just cooked (about 2-3 min) Add cream (slowly) adjust seasoning if needed. Puree with a hand blender. This makes about 2 litres or 8 cups.
