Simple bread

Ingredients

3 cups Bread Flour1 1/2 cups water1/4 ts yeast1 1/4 ts salt
Mix all the dry ingredients, making sure yeast and salt are evenly distributed. Add the water and mix until the mixture just comes together, leaving no more dry flour around the edge of the bowl. Let the mixture sit overnight, covered in a warm place.
In as few as 12, as many as 24, remove the dough onto a well floured surface and dust with flour, the dough will be very sticky. Don't punch down the dough as you would with normal bread. Stretch the dough, lengthwise, fold in thirds. Stretch the dough again in the opposite direction, fold in thirds again. Gently, so as not to punch out all the gas, round it out slightly and place on a well floured towel, or a well floured bowl (and I mean VERY well floured), cover and let rise for about 2 hours.
Place a cast iron pan in the oven to heat. You can use a cast iron dutch oven, or if you have nothing else, just stick it in a pie pan, which you can do without preheating. Place another pan in the bottom of the oven. This pan will be to put ice in, to produce steam giving the bread it's wonderful crust.
Trying not to pop too many bubbles, place the risen dough in the hot cast iron pan, as well as several ice cubes in the tray below and cook for 10 minutes. Reduce the heat to 450, turn the bread, for even baking for another 10 minutes. Finally, remove it from the pan and bake at 350 for another 10 minutes. After the first 10 minutes you can remove the ice tray.
Once it's all cooked, place on a cooling wrack for as long as you can stand before slicing off a piece with a small amount of butter and/or honey (pick your favorite topping). It makes great toasted bread.
