Spicy Curried Pumpkin Peanut Soup

1 sweet onion, peeled and diced1 cup raw carrots, chopped1 garlic clove, peeled and diced2 cups pumpkin puree1/2 cup creamy natural peanut butter1 tablespoon curry powder1 teaspoon cayenne pepper2 3/4 cups veggie broth1/2 ounce dry roasted peanuts, finely chopped1/4 cup coconut milkSalt
Add onion, carrots, garlic, pumpkin puree, peanut butter, curry powder, cayenne pepper and veggie broth to a crock pot. Stir until combined.
Cook on low heat 6-8 hours (depending on your slow cooker).
When onion, carrots and garlic are soft, puree the soup with a stick blender until completely combined.
Ladle into bowls. Slightly warm coconum milk in the microwave. Garnish as desired with warm coconut milk and dry roasted peanuts.
