Sweet Potato Quiche with Turkey Sausage and Mushrooms

2 cups sweet potato, peeled and thinly sliced2 tablespoons flour6 oz turkey sausage2 cups kale chopped1 cup mushroom sliced1 cup onion chopped4 large eggs4 large egg whites1/2 cup low fat milk1/2 cup low fat cheddar cheese1/2 teaspoon saltdash black pepper3 garlic cloves chopped finedash nutmeg
1. Preheat oven to 450
2. Dust sweet potato with flour, layer in buttered pie dish. Bake for 30 minutes until tender.
3. In a large frying pan, cook sausage until done. Remove and set aside
4. Add onion to the pan cook about 5 minutes until soft, then add mushrooms. Cook another 5 minutes. Then add kale, garlic and the cooked sausage to the mixture for another 5 minutes until kale is wilted.
5. Whip eggs, half & half, nutmeg, salt & pepper until frothy.
6. Top sweet potato crust with veggie mixture. Pour egg over the top then top with cheese.
7. Reduce oven to 400 and bake 20 minutes until egg is set.
