Corn Meal Muffins

Ingredients
1 1/4 c. flour3/4 c. cornmeal1/4 c. sugar2 tsps. baking powder1/2 tsp. salt1 cup 1% milk (you can use skim)1/4 c. canola oil2 eggs
Directions
Mix together flour, corn meal, sugar, baking powder, salt, milk, oil and eggs until smooth. Fill muffin tins up stopping at a 1/4 inch from the top. Bake at 400 degrees for 20 to 25 minutes.
