Sweet Potato Chocolate Chip Cookies

Ingredients
Roast sweet potato in skin in oven at 425 for about 15 mins or when you can easily stick a fork threw it. When cooled enough to peel place the sweet potato and sugar together and beat. Add the flax meal. Mix well. Add dry ingredients and mix. Stir in chocolate chips. Roll in little balls on an un-greaseed cookie sheet. Put in for about 8-10 mins. Depending on how you like your cookie you might want to compromise my time. Enjoy they are so yummy!
