GastriKate's Ham, Potato & Leek Soup

4 medium russet potatoes, diced small with skins on2 leeks, split & rinsed2 carrots1/2 onion, minced3 slices boiled ham (6" x 4")5 cloves garlic, crushed3 c. no-salt chicken broth1 tsp. dried oregano1/2 tsp. salt
Run the leeks in a food processor until chopped fine.
Then simply place all the ingredients in a crockpot on high and cook for 3-4 hours, or on low for 6-8 hours.
To make it even more attractive without adding calories, sprinkle chopped chives on top.
Serving Size: Makes 6 2-cup servings
