Priya's Moong Dal Dosa

Ingredients

1 cup split moong dal1 Serrano chili1/4 inch slice of fresh ginger root1/2 teaspoon cumin seed1/2 teaspoon salt2 tablespoons Canola oil
Wash moong dal until the water runs clear, and then soak in water for at least four hours. Make sure the water is more than double the volume of the dal.
When ready to cook, drain the water from the dal and add it, the chili, and the ginger to a food processor or blender and mix until it is fine and there are no solid pieces of dal left. Add just enough water (one teaspoon at a time) to the dal as needed, but it blends better with no water.
Add the salt and cumin seeds and stir. Add additional water as needed until the dal is the consistency of pancake or dosa batter.
Use a ladle to spoon 1/4 cup of batter onto a oiled, sizzling hot skillet. Once the top of the dosa has dried out, sprinkle oil on the top and flip over to cook for a couple of additional minutes.
Serving Size: Makes 12 dosas based on 1/4 cup batter
