SunRice Mountain Blend: Brown, Red & Black (1/3cup=70g uncooked), 100 g*Brown Rice, long grain, .5 cup *Lentil, Masoor - Whole, 50 gOnions, raw, 1 medium (2-1/2" dia) Mushrooms, fresh, 7 small Red Wine, 40 mL Garlic, 2 clove Oregano, dried .6 tbsp *Cumin seed, 1 tbsp *Coriander seed, 1 tsp Olive Oil, 2 tsp Beans, fava, 1 cup
Cook rice and lentils through absorption method I.e. Pour boiling water over and above rice about 1.5 cm. Boil and reduce to simmer 'til absorbed - takes about 15 mins. Use frozen fava (broad beans) or double shell fresh ones well in advance - it's a labour-intensive task! Put beans into last 5 mins of boil and stir through. In the meantime, fry onions, garlic, oregano and spice seeds in olive oil, then add mushrooms and a small amount of wine to deglaze, then salt and pepper to taste. Stir onion mix through rice.
