Teff Pancakes

1 cup teff flour1/4 cup tapioca flour2 Tbsp ground flax seed1 tsp baking soda1/2 tsp salt1/2 tsp cinnamon1 cup water or mild or coconut milk1 egg (optional)1/2 cup mashed ripe banana or applesauce2 Tbsp melted coconut oil or olive oil1 Tbsp maple syrup, honey or agave nectar
In a small bowl mix together well the dry ingredients. In a separate bowl or liquid measuring cup, whisk together the wet ingredients. Add the wet ingredients to the dry and whisk together. Heat a skillet over medium-low heat until hot. Add a little oil. Drop batter with a cup or ladle onto the skillet. Flip pancake after tiny bubbles form. Cook for another minute then transfer to a plate.
