Turkey-Zucchini Skillet Dinner

Ingredients
1 tbsp extra virgin olive oil1 medium onion, diced2 stalks celery, diced10 medium baby carrots, diced8 oz sliced mushroomssalt, paprika, cayenne pepper, poultry seasoning to taste1 lb lean ground turkey2 cloves garlic, peeled & diced2 medium zucchini, diced1 15.5 oz can white cannellini beans, drained & rinsed well2 15.5 oz can diced tomatoes, undrained
Directions
Heat olive oil in a large skillet.
Add onion, celery, carrots, & mushrooms.
Season to taste with salt, paprika, cayenne pepper, & poultry seasoning. Saute until tender.
Add ground turkey & saute until browned.
Add garlic & saute for 1 minute.
Add zucchini, beans and diced tomatoes with liquid.
Simmer covered until vegetables are tender (about 45 minutes). Remove cover the last 10 minutes to reduce liquid if necessary.

Serving Size: Makes 6 1-cup servings.
