Best Ever Sweet Potato Casserole

For Filling3 Large sweet potatoes1 Egg1/4 Cup Brown sugar1 tsp Cinnamon1/4 tsp Nutmeg1/4 tsp Salt1/4 Cup Milk2 Tbsp ButterFor Topping1 Cup Old fashioned oats1/3 Cup Butter1/4 tsp Cinnamon1/3 Cup Brown sugar
Boil potatoes for 10 minutes, or until tender. Combine all ingredients for filling in a stand mixer or a large bowl. Beat on low speed for 30 seconds, increase speed to med/ high and mix for an additional 2 minutes, scraping the sides as needed. Spread into a 9x9 casserole dish.
In a food processor or blender, combine ingredients for the topping, pulse until mixture is finely ground (will be sticky and clumpy) Sprinkle over the top of the potato mixture. Bake at 375 degrees for 15-20 minutes
