Sweet Potato and Broccoli Soup

2 Medium Sweet Potatoes peeled and cut into 1/2" cubes1 bunch of broccoli crowns coarsely chopped1 large onion chopped3 cloves garlic minced3/4 cup veg. or chicken stock1tsp Thyme1tsp Chili powder1 tsp cinnamonsalt and pepper to taste2 cups unsweetened almond milk (or lowfat milk)2 tsp virgin coconut oil (or olive oil)
Heat soup pot. Add oil, onion, garlic and sweet potatoes. Pinch salt to sweat the vegetables. O ce onion is translucent and potato starts to soften add broccoli and stir until well combined. Add chicken stock. Bring to a boil add seasonings and simmer for 15 minutes until very tender. Lower heat and add milk slowly. Use stick blender to "cream" the soup. Leave some chunks of vegetable for texture if you would like.
