Beef Sausage with Veggies

2 Beef Sausage Links8 cups of chopped Kale2 cups baby carrots8-10 small potatoesOne large onion1 tbsp canola oil1/2 cup chicken brothSalt and pepper to taste
Heat up oil in dutch oven or large cooking pot.
Dice onions and saute them until slightly translucent.
Slice potatoes into 1 inch pieces.
Slice sausage.
Put onions, potatoes, sausage, carrots, and kale into pot.
Add chicken broth.
Stir all ingredients until well mixed.
Cover with lid and let cook until vegetables are tender.
Salt and pepper to taste.
Serving Size: Makes 4-6 one cup servings
