Ingredients
1 Yellow squash per person ( recipe is for 3 ) 1 Cup brown rice1 can tomato Salt and pepper to taste
Directions
hollow out the squash and set aside the seeds and stems
mix about 1/2 c of the tomato broth with the rice, then pack the stuffing into the squash.
Add the tomato, the trimmings from the squash and 1 can of water to a pan. Add the squash and set on a low flame. simmer for about an hour.
