Gluten Free Whole Grain Pancake & Waffle Mix

Ingredients
3 cups brown rice flour1 cup chickpea flour1/4 cup sugar8 tsp (2T & 2t) baking powder1 tsp salt
Directions
This mix is best stored in a refrigerator. Place 1-2 cups in a bowl and add oil, egg or egg replacer, and water. Cakes made with thin batter will be more difficult to turn. Heat griddle so that a splash of water sizzles. Drop batter by spoonfuls onto hot griddle, lightly pressing the center to spread the batter. Wait for the edges of the cakes to become dry. Flip and watch for the steam to lessen. Remove to plates or a rack.
