simple eggplant parmigiana

1 tb olive oil for browning beef
Directions
brown beef then add tomato paste. slice eggplants; grate cheese. layer eggplant, beef and cheese in baking dish, makes 2 layers. top with mozzarella singles (optional). bake for 20-30 minutes.
