4 cups Chicken Broth-Low Sodium1/3 cup Celery, Diced - Raw1/3 cup Carrot, Sliced thinly1/2 cup Onion - Raw, chopped1 15 oz. Can Fire-Roasted Petite Diced Tomatoes w/ roasted garlic 1 14.5 oz. Can Diced Tomatoes(roasted garlic & onion) 1 4 oz Can Fire Roasted Diced Green Chiles4 oz. Frontera New Mexico Taco Skillet Sauce1 15 oz. Can Black Beans, drained/rinsed1 15 oz Can Great Northern Beans drained/rinsed1 Can 15 oz. Can Navy Beans drained/rinsed1 10 3/4 oz. Can Cream of Chicken Soup (98%Fat Free & Low Sodium)12 oz. Chicken Breast, Costco Gold Kist Farms, leave whole1 tsp Oregano, dry1 Tbsp Chili powder1 tsp Cumin (ground)
Spray bottom of Crock Pot with Cooking Spray. In prepared crock, add Chicken Broth, Celery, Carrots, chopped onion, cans of Tomatoes, Green Chiles, Taco Skillet Sauce, rinsed/drained beans, Cream of Chicken Soup, Oregano, Chili Powder, & Cumin. Stir to mix ingredients together. Place whole pieces of chicken on top of all other ingredients.
Put lid on crock pot, turn on High; let it cook for 6-8 hours. One hour before it is fully done, remove chicken breast and shred with two forks. Return shredded chicken back to chili. Serve hot.
