Stuffed Acorn Squash with beans

1 acorn squash cut in half and seeded.1/2 c. Brown rice (1 c cooked)1 c. Veg broth + extra if needed1/2 c each of chopped peppers, onions, mushrooms1/2 c. Black beans
Cut and bake squash faced down in the oven at 400 degrees until softened and golden on the bottom.
Boil rice in vegetable broth, mid way through add vegetables and cover. Add more what if needed.
Once almost complete, add beans.
Scrape out about three tbs of squash and mix into rice mixture. Stuff mixture into squash and bake for about 10-15 ,minutes.
