Ital - Style Seafood Noodle Bowl

1" stick cinnamon1 star anise2 cardamon pods2 cloves1 teaspoon coriander1 teaspoon aniseed2 shallots2 cloves of garlic1" fresh ginger, grated2 tsp ground black pepper1 tsp olive oil1 carrot, shredded1/2 cup diced tomatoes, drained1 red pepper, diced1 cup shredded green cabbage3 cups water2.5 oz peeled large shrimp2.5 oz cod fillets, cut into cubes2.5 oz fresh bay scallops1 1/2 cups cooked soba noodles
Tie spices in a square of cheesecloth and set aside.
Blend the shallots, garlic, ginger and black pepper to a fine mixture in a food processor or mortar and pestle.
Heat oil in a large saucepan, add the blended mixture and cook 1-2 minutes, until fragrant.
Add water and bag of spices. Bring to a boil, reduce heat to a rapid simmer and cook 15 minutes.
Add vegetables, simmer 5 minutes.
Discard the soup spices.
Add the seafood and cook 2-3 minutes or until shrimp are pink.
To serve, put some noodles into a bowl and pour soup overtop.
