Baked Oatmeal Pudding

Ingredients
4 cups water2 cups old-fashioned oats1/2 cup raisins3/4 t cinnamon2 c skim milk4 eggs2/3 c maple syrup1 t vanilla1 T sugar
Directions
cook oatmeal, raisins and 1/2 t cinammon. Reduce heat to low and simmer 8-10 min.Let stand until luke warm;20-30 min.
stir in milk. Add eggs one at a time, stirring well after each. Stir in syrup and vanilla.
spray 13x9 pan. Add mixture. Cover and refrigerate over night.
Heat oven to 350. Combine sugar and remaining cinnamon. sprinkle over mixture.
Bake uncovered 1 hour 10 min, or until oatmeal is set and knife inserted in center comes out moist but clean. Let stand 10 min before serving.
