Beef Bourguignon

Ingredients
2 lbs stewing beef1 cup chicken broth3 tbsp flour1 tbsp tomato paste1 tbsp oil 1 ½ cups chopped onion1 cup red wine1 bay leaf¼ tsp thyme1 cups mushrooms (or up to 6 cups, as desired)3 tbsp butter
Directions
Mix together flour, broth and tomato paste.
Seize meat in oil; put aside.
Add onions to same pot in which meat was siezed until soft.
Add flour and broth mix, stirring constantly until simmering; add wine and seasonings. When simmering once again, add beef. Cover and let simmer 2 hours. At the end, add the mushrooms which have been sautéd in the butter.
Serves 6.
