Sweet Corn and Zucchini Fritters

Ingredients
4 cups of shredded zucchini4 medium ears of sweet corn, cut off the cob3 cups of self-rising flour4 eggs2 cups of milkCanola Oil for frying
Directions
Combine all the ingredients except zucchini and corn, mix well in bowl. Fold in remaining ingredients. Heat a little canola oil in pan and spoon about 2 tbsp. of mix. Cook for a few minutes and flip.

Serving Size: Theoretically this makes 16 servings of 2 fritters
