Bell Pepper & Pepper Jack Cheese Quiche

Ingredients
Cooking Spray or Olive Oil1 tbls butter1.5 cups of chopped bell peppers appx 1"2 large eggs1 egg white3/4 cup whole milk (any will do)1/4 teaspoon salt1/8 teaspoon pepper2 ounces shredded cheese (I USED PEPPER JACK - BUT USE WHAT YOU HAVE)1. Preheat oven to 425. Spray four 5 oz ramekins w cooking spray. 2. Melt butter in a cook pan and add bell peppers until soft and sauteed 3. Whisk together the eggs, egg white, milk, salt, pepper until well blended. Divide Shredded cheese and sauteed peppers into ramekins. 4. Place ramekins on rimmed baking sheet. 5. Bake just until set (the center should still jiggle a little), about 15-20 mins. If making at the same time follow the order - if not - do steps 2 & 3 and throw it in the fridge and then on the days you cook them do 1, 4 & 5!
