Skillet Chicken Breast with Sweet Potato

Ingredients
2 boneless & skinless chicken breast halves1 large sweet potato, peeled and cut in large cubes (about 2 cups)1 small onion, chopped (about ½ cup)1 small (8”) zucchini, sliced1 small (8”) yellow summer squash, sliced1 c. fresh mushrooms, sliced2 Tbs. lemon juice1tsp. original Mrs. Dashsalt & pepper to taste
Directions
In a large skillet sprayed with cooking spray, brown both sides of chicken breast well over medium heat and remove from pan. Add vegetables, lemon juice, and spices to pan plus 2 Tbs. water. Place chicken on top of vegetables and cover tightly. Cook until sweet potato is soft and chicken is done, about 30 minutes more.

Serves 2

** Hint: The sweet potato can be partially precooked in the microwave for about 3 minutes to speed up the cooking time a lot.
