Soy Chorizo and Lentil Potato Stew

Ingredients
lentilsrusset potatosSoy ChorizoRed Bell PepperGreen Bell PepperCarrotsCeleryGarlicVeg Stock
Directions
Simmer lentils in veg stock for 30 minutes.

Sautee Garlic in oil.
Add all vegetables and sweat until opaque.
Add potatos heat for a few minutes.
Add Soy Chorizo and cook a few minures. Add cooked lentils and remaining stock. Bring to a boil and simmer for 20 minutes.
