Old Fashioned Light Fruit Cake

1 lb. pitted dates, chopped4 c. nuts, unchopped3/4 lb. candied pineapple chopped3/4 lb. candied cherries whole1 lb. white (golden) raisins1 c. butter or margarine2 1/4 c. sugar6 eggs1/2 c. orange juice1/2 c. syrup4 c. sifted flour1 t. nutmeg1 t. salt2 1/2 t. cinnamon
Line pans with foil. Mix nuts and fruit together. Mix together butter, sugar, eggs, juice and syrup. Sift together flour, cinnamon, salt and nutmeg. Thoroughly mix flour mixture with butter/egg mixture. Work nuts and fruits into batter with heavy spoon or hands. Fill pans 2/3 full. Decorate with candied fruit and nuts as desired. Bake at 275 degrees for about 2 to 2 1/2 hours or until knife inserted in center comes out clean.
Serving Size: Makes 2 loaf cakes and one 10" tube cake.
