Quinoa Casserole

Ingredients
1 cup of ...quinoaveggie brothcarrotsone small onionmushrooms(really, whatever veggies or fake meat you have on hand will work)
Directions
Put all ingredients into a large casserole dish. Ensure you adjust quinoa + broth per quinoa instructions, if you are making bigger/smaller.
Cook for 20 minutes at 375 (until quinoa is cooked through). Nice with a BBQ sauce. Or, if you are 3, great with ketchup!
