Spicy ginger-carrot soup

Ingredients
Carrots 4 cupsPotatoes 2 mediumOlive oil 1 tbspchicken broth 2 cupsGinger root groundfresh red chili pepperLemon zest and 1 tbsp juicesalt and pepper
Directions
Sautee' onion in a pot and add broth, water (4 cups), carrots, potato, salt to desire.

When vegetables are tender, puree to obtain a creamy soup.

Add ground ginger root, finely chopped chili pepper, lemon juice and lemon zest to taste. Adjust salt.

Serve with freshly ground black pepper.
