Turkey, Leek, and Kale Soup

Ingredients
+ 2 4-cup packages of Trader Joe's Low-Fat Turkey Broth, plus 1 cup (or add 1 cup of home-made turkey roasting-pan broth, fat removed)+ 2-3 large leeks, raw, sliced (yield 4 cups)+ Kale leaves, raw, chopped (4 cups, no stems)+ Turkey, cooked, light and dark meat, diced (1 lb.)+ Ginger, minced (1 Tbsp)+ Garlic, minced (3 cloves)+ Fennel bulb, raw, diced (1 cup)
Directions
Pour turkey broth into a soup pot (at least 6 quarts in volume). Add to the broth all other ingredients. Place the pot over medium heat; allow to come to a slow boil and stir. Reduce heat to simmer for the remaining time; soup can stay on low heat longer to build and blend flavor, but do remember to stir occasionally.
