Chocolate Covered Joyful Almonds

Ingredients
1/2 Cup pure canned Coconut Milk (full fat)1/2 Cup Unsweetened shredded Coconut1/2 Cup + 2 TBSP Raw Organic Honey1/2 Cup Sliced almonds1/2 Stick unsalted Butter1 4 oz. Bar Ghirardelli !00% Cacao bar
Directions
Place Coconut milk, 10 TBSP or (1/2 cup) honey and butter in a saucepan over medium high heat and bring to a boil stirring constantly for 10 minutes or until 300F on a candy thermometer. remove from heat and stir in almonds and shredded coconut. Put approx. 1 Tbsp into 24 miniature cupcake cups or in a 24 count silicone mold. place in the freezer for 2 hours or overnight to make sure they are good and frozen. Meanwhile melt chocolate bar in a double boiler over medium high heat until melted. Add 2 Tbsp of honey to sweeten. Dip frozen squares into chocolate to coat. Place on waxed paper and place in refrigerator to chill and set chocolate. Eat and enjoy this guilt free dessert!
