Chipotle Dressing, Fat Free

Ingredients
1/2 cup red wine vinegar1/3 cup honey1 chipotle pepper along with one tablespoon of adobo dauce 2 tablespoons kosher salt (or 1 tablespoon table salt)1 teaspoon freshly ground black pepper1 tablespoon finely chopped fresh oregano1-1/2 cups water1/4 to 1/2 teaspoon xanthan gum
Directions
Add all ingredients except the xanthan gun to a blender jar and blend until the chipotle is finely chopped.
Start with 1/4 teaspoon of xanthan gum added to the blender jar and blended. Add additional xanthan gum until the dressing has the consistency you like.
