1 cup Egg beaters2 cups skim milk2 slices cooked bacon, or ham or canadian bacon1/4 cup onion chopped1 clove garlic chopped1 cup spaghetti squash2 tabs flour2 small potatoes diced1/4 tsp salt 1/4 tsp pepper2 tsp baking powder1/4 cup cheddar shredded cheese reduced fat1/4 cup mozzarella shredded cheese reduced fat
Spray a 9" -10" or large pie pan with cooking spray. Preheat oven to 350 degrees. cook bacon, set aside. Dice potato and onion. sauté potato, onion and garlic in skillet sprayed with cooking spray until tender. set aside. poke squash with knife several times (Freddy kruger it). put in microwave for 18-20 on high. remove from microwave cut open scoop out seeds and using a fork separate strands of squash. In blender or food processor, add eggs, milk, flour, baking power, salt & pepper. blend for 3 minutes. add squash, bacon, potato & onion mixture, & cheeses. Stir by hand not process. Pour into prepared pie dish. Put into oven. cook for 50 minutes or until knife inserted in center comes out clean.
